I don't see any problem with it if we're drawing on the currently defined accounts. We just wouldn't want to separately store the name and then end up with a privacy issue where if you deleted to zero accounts and go to add a new one we still magically remember your name.
Of course, if we event change things so that we just look in your account's sent folder for the display name you used there, this change might become moot. But that's non-trivial for both implementation and UX reasons, so this would seem like a fine first step.
